Summertime Salad

Our house has no air conditioner, so when summer hits I avoid turning on the oven like I would a family of zombies. Which is to say: a lot. This simple salad is one of our favorite quick, no-cook, vegetarian summer meals.

Ingredients (serves 4)
4 cups black beans including the "juice" from one can ( Use two cans of black beans, or 4 cups if you cook your own)
1 large bell pepper
4 roma tomatoes
1 can corn
3 green onions

Dice the pepper, green onions and tomato.  We prefer to have everything in the salad around the same size, so we dice them about the same size as the corn/beans. This used to make enough for us to have leftovers for lunch for a couple of days (which is heavenly), but now our family finishes off pretty much all of this recipe.  If you want leftovers, or have more than 4 people eating, you may want to double or triple the recipe.

Toss everything into a bowl.


We like to scoop this salad up with Frito Scoops chips, which admittedly takes away some of the healthiness factor of the salad.  However, it's delicious and Fritos have only 3 ingredients, so I don't feel quite so bad about it.
