Cinnamon Swirl Bread Recipe

This is one of our family's favorite bread recipes.  I make it freqently to take to friends or as a refreshment for get-togethers.  It is quick and cinnamony and delicious.  The swirl of cinnamon goodness and crunchy cinnamon-sugar topping make it irresistable (at least to us cinnamon-loving folks).

Cinnamon Swirl Bread

1 3/4 C sugar divided
4 C flour
1 t salt
2 eggs
2 T cinnamon
2 t baking soda
2 C buttermilk (or 2 C milk with a tablespoon of vinegar or lemon juice added)
1/2 C vegetable oil
Grease bottom of 2 loaf pans.

Combine 1/2 C sugar and cinnamon. Set aside.

Combine flour, soda, salt, and remaining sugar (1 1/4 C). Combine buttermillk, egg and oil.  Stir in dry ingredients until moistened.   Pour 1/4 of batter into each pan. Sprinkle cinnamon-sugar mixture on top of batter.  Top with remaining batter. Sprinkle with more cinnamon-sugar.

Bake at 350 degrees for 40-45 minutes.  Cool in pan 10 minutes before removing. Let cool completely before serving.

Makes 2 loaves.

**Just to clarify: this is what we call a "Sometimes Food".  It is not healthy.  But it is tasty and fun to share and, at least in my mind, healthier than some alternatives.  I am sure you could use less refined ingredients, but I've never tried that.  We love the recipe too much to change it.
