Perfect Recipe for Overgrown Zucchini

This time of the year, with our garden bursting at the seams, it is not surprising that we found a couple of giant summer squashes lurking in the garden.  Once zucchini (and other summer squash) get too large they are not very tasty.  But, I have the perfect recipe to use up those overgrown veggies:

First, cut the squash in half lengthwise and scoop out the guts. 

Next, drive to your favorite park with a slowly-moving waterway.

Plop your new boat in the water and cheer loudly as it moseys down the stream.
Jumping in the water to push your boat along is optional, and some might call it cheating.

Also, be prepared for unknown children to be attracted to the fun and attempt to sink your squash-boat with large rocks.

ps-- Yes, I know these giants could also be shredded and frozen to use in baked goods.  We have done a bunch of that, too.  But let's face it; as wonderful as zucchini bread is, vegetable boats are much more fun.
