I've been on the lookout for a healthy whole-grain pancake mix to make ahead and keep on hand for a simple breakfast (or, let's be honest, a quick dinner) option. After spending some time looking around the Internet, nothing really struck my fancy. So I decided to experiment a bit and came up with my own.
My kids gobble these pancakes down every single time I make them. The texture is a little different than the typical white flour pancakes but we all love the added bits of sweet, cruchy millet. I usually make a triple batch and put the leftover pancakes in the freezer for a quick, healthy breakfast in the future. Reheat in the microwave for a minute or so and you're good to go.
Ingredients:2 C millet
4 C oats
1 C ground flax seed
5 C wheat flour
4 TBSP Baking Powder
1/3 C oil
Instructions:Place millet in food processor or blender and grind. Add oats and grind until oats are a flour-like consistency. Mix all ingredients in large bowl. Store in ziplock bag or other air-tight container until ready to use.
When ready to make pancakes, place one cup of mix in a large bowl with:
1/2 C buttermilk (or 1/2 c milk mixed with 1 tbsp vinegar to sour)
one large egg
1/2 tsp vanilla
Add more milk as needed until the batter is the proper consistency.
Drop by 1/4 C on heated skillet or griddle. Cook and flip.
